French Lentil Soup with Sausage
French green lentils, garlic sausage, onions, carrots, celery, garlic, beef stock, bay leaf, dried thyme, balsamic vinegar, olive oil, sea salt & pepper.
Like other legumes, lentils are low in fat and high in protein and fiber. Lentils have a mild, earthy flavor, and they're best if cooked with assertive flavorings. The best, most delicate lentils are the peppery French green lentils. Served chunky and unadorned this simple, peasant-style soup is perfect on a chilly fall evening.

Dear Catherine and Kathy,
ReplyDeleteLast night I tried your Lentil Soup. Wow! I have enjoyed all of your soups, but I thought that was the best Lentil Soup I have ever had. I like the big slices of carrots and sausage. Great flavor and wonderful variety of textures. Also- very satisfying- I 'm still full! Great Job! Have fun at Harrigans.
